During my recent Las Vegas trip, I got to taste the Chia Seed Parfait at the Giada and I really loved it! The moment I tasted it, I knew I wanted to replicate it so that I can enjoy something similar at home. So here’s my not-a-celebrity-chef-just-a-normal-person version of that parfait.
For this Raspberry Yogurt Chia Seed Parfait recipe, I used Mountain High Low Fat Vanilla Yoghurt.
Mountain High provides versatile, wholesome and yoghurt at a great price that both your palate and your wallet will love. Mountain High started making yoghurt in 1976 using a traditional European method fondly renamed “Cultured in the Cup” — a method still in use today. The milk and cultures are mixed together and put into the same cups that are shipped to the store later. The cups sit in a warm room for several hours while the cultures work their magic: thickening the yoghurt and giving it its distinct creaminess and tang.
Since Mountain High uses only cultures to thicken our yoghurt, there is no need to add any gelatin or funny stuff. And it’s not just any milk they use either. Because they want the milk to taste perfect, they look for farms where they never treat the cows with growth hormones. All Mountain High products are made with just a few simple ingredients, and all of this simplicity makes Mountain High awesome!

Recipe: RASPBERRY YOGURT CHIA SEED PARFAIT with Mountain High Yoghurt
Ingredients:
- 1 cup + 1/4 cup Mountain High Low Fat or Fat Free Yoghurt in Vanilla
- 1 cup vanilla-flavored almond milk
- 3 tablespoons + 2 tablespoons maple syrup
- 1/4 cup chia seeds
- 1/2 cup fresh raspberries
- sliced almonds
Directions:
- In a medium bowl, mix 1 cup Mountain High Yoghurt, almond milk, 3 tablespoons maple syrup and chia seeds. Stir until you get an even consistency. Refrigerate overnight.
- In a small bowl, crush raspberries with a fork and mix together with 2 tablespoons maple syrup.
- Spoon the chia seed pudding into a cup.
- Add a layer of the raspberry-maple syrup on top, then add a layer of Mountain High Low Fat or Fat Free Vanilla Yoghurt.
- Top with 1-3 fresh raspberries and sliced almonds.
- Serve and enjoy!
My son and I both loved this parfait recipe! And you know what, if you’re not in the mood to create perfect layers, you can just mix everything together and enjoy it! What’s important is that you’re eating something that’s both yummy and healthful.
You can opt to substitute strawberries for the raspberries (or any other fruit you like for that matter) so feel free to customize based on your taste!

Wow! This looks delicious! I haven’t tried Mountain High Yogurt yet, but I will have to look out for it at the store.
Do they sell Mountain High Yogurt in Texas?
I have been searching for a good parfait recipe that utilizes Almond milk. Never had chia seeds before. Could this also be used with flax seeds?
I don’t think so since a chia seed softens and expands in liquid creating a pudding like texture.

I’ve never thought chia seed would go in a parfait. Need to try this out ASAP. Looks delicious!
I have never heard of this company before. I might give them a try. It looks very yummy.
I have never tried chia seeds before. It looks like tappioca, which I enjoy. This recipe sounds and looks amazing. I can’t wait to try it. Thanks!
I love chia seeds. In fact I might be said to have been a bit early to this fashion since I was eating them in the 1970s! I also refer to make yogurt dishes myself with plain yogurt and fruit instead of the sugary combinations that they sell pre-packaged.
This looks yummybayareamommy
Wow, this looks delicious, mom will love it!
I don’t really like yogurt but I know some people that would LOVE this recipe
I’ve been looking for ways to incorporate chia seeds in our foods – why didn’t I think of adding it to our yoghurt parfaits?! Brilliant!

Thanks so much for the terrific recipe on Raspberry Yogurt Chia Seed Parfait with Mountain High Yoghurt! I’ve never had chia seeds before and I’m a bit afraid to try them. Do the chia seeds get soft being in the yogurt? I don’t like anything with crunchy stuff in it. If they get soft, that’s a different story! This Parfait looks so yummy though! I would love to give it a try, if I knew what the Chia Seeds do in it! Thanks for sharing your terrific recipe for Raspberry Yogurt Chia Seed Parfait with Mountain High Yoghurt with all of us! I truly do appreciate it! Thanks so much! Michele 🙂

Hi Michele Ash! Yes, the chia seeds become soft when they get wet. Takes a couple of minutes though. This is why we need to refrigerate the mix overnight. It gives the chia seeds time to soften. I honestly haven’t tried chia seeds before I tried the parfait at Giada. But now I’m in love with them! – Alice 🙂

This sounds like a very unique tasting dish!!! I love raspberry yogurt!!! I am not sure about the Almond milk, as I find this is too sweet! But, I am willing to try it! Thanks for the recipe!
Not crazy about almonds or almond milk, but I think I’ll be playing around with this recipe. Thanks!
Raspberry is one of my favorite fruits. I can’t bring myself to try the chia seeds though.
I never thought of using chia seeds like this. I know they are very good for you, and I buy a brand of oatmeal that contains flaxseed and I believe chia. I won’t go back to regular oatmeal. I’ll definitely have to try chia seeds like this- or even a smoothie.
I’ve never heard of this brand before. I will have to look for it this weekend when I go grocery shopping, it looks delicious!
Don’t think I’ve ever had any Chia seeds but this recipe looks so good I’d be willing to try them. This looks so refreshing and could probably substitute any berry I want.
I will have to try this for breakfast this week!
Thanks again for sharing your recipe on Raspberry Yogurt Chia Seed Parfait with Mountain High Yoghurt! The last time I had asked about the chia seeds. Guess what, I finally got my delivery from a giveaway a long time ago Trachealth, and in the box is a very nice sized bag of chia seeds! Now I will be able to make your recipe and see for myself how they taste and if they get soft. They do look quite small from what I can see through the package! When I saw the package of chia seeds, I said Oh, now I can try that parfait that was on Bay Area Mommy’s website! My husband looked at me like I had 2 heads or something because he had no idea what I was talking about! LOL Thanks so much for sharing this recipe with all of us! I saved the recipe and will give it a try when I get the chance! Thanks so much! I really do appreciate it! Michele 🙂

That looks almost too pretty to eat. I don’t know how you layered it all in there so evenly.
The story behind how they make this is interesting. Today is the first day that I read that part.
It’s nice to see a yogurt recipe that doesn’t call for Greek yogurt. That stuff tastes a bit like sour cream to me.
I buy Mountain High Yogurt every now & then. I signed up for the newsletter. I was suppose to get a coupon for signing up, but I still haven’t received it yet. GREAT recipe – thanks for sharing!
